Have you ever gone to make something for dinner and found you don’t have what you needed and going to the store is not an option? That is what happened to me the other night while I was trying to make dinner. I tried not to panic and went to plan B. Now I am in a panicked, I don’t have what I need for plan B. It looks like this is going to be a throw down. I literally looked & took this and that and made something that was delish….I’m calling it my Fiesta Throw Down.

Fiesta Throw Down

1 to 1 ½ Pounds of Hamburger

1 19 oz Can Enchilada Sauce - Red (I use Old El Paso)

1-10 oz Can Rotel (Drained)

1-15 oz Can of Whole Black Beans

1 to 1 ½ Cup Shredded Mixed Blend Cheeses

1 Medium Onion

8 oz Box of Pasta (I used Penne)

Start the water for Pasta

1. Brown your Hamburger (drain grease off)

2. Add can of Enchilada Sauce allow to simmer

3. Add Diced Onion

4. Add Can of Black Beans

5. Add Rotel (I drain mine)

6. Allow to simmer while pasta cooks. If pasta is done place in the bottom of a deep casserole dish.

7. Pour the Meat mixture over pasta and fold together.

8. Add a cup of cheese fold it into mixture.

9. Top remaining cheese over the top.

Place in an oven at 350F and back 10 to 15 minutes.
